Amaretti: The Incredible Italian Almond Cookies

The history of these little pastries goes back more than 100 years. They come from the Gallarate area. These pastries are very popular because of their unique taste. METHOD

Step 1: Put the sweet and bitter almonds in a food processor and grind them by adding granulated sugar and a little egg white.

Step 2: Transfer the mixture to a large bowl and beat for 15 minutes with an electric mixer.

Step 3: Now incorporate the powdered sugar and slowly add remaining egg white and baking powder.

Step 4: Blend until smooth and white.

Step 5: Pour the mixture into a pastry bag fitted with a smooth tip and make small mounds on a baking sheet lined with baking paper.

Step 6: Let the macarons rest for 12 hours, but in a dry place.

Step 7: Before baking, sprinkle powdered sugar on it. Pinch them with your fingers to give them shape. Then place in the oven and bake them at 400 degrees for 15 minutes.

Step 8: Allow them to cool after baking.

Step 9: Then when it is completely cooled, serve the delicious macarons.
