Bagna Cauda: Garlic & Anchovies Dip Sauce

Bagna cauda is made up with garlic, oil and anchovies and people used to eat it with fresh vegetables. This is a very tasty dish and people use it as a main dish but it can also be served as a starter before dinner.

In the old days, when people gathered with their family members or friends, they used to eat this dish. But now in modern times it is considered as a sign of friendship and happiness.

METHOD

Step 1: Chop fresh vegetables and keep aside.

Step 2: To make the garlic digestible, we will cut the garlic into two parts. Boil it in a saucepan and do this four times. This will make the garlic digestible and retain its taste.

Step 3: Now boil the same garlic in milk.

Step 4: In a separate frying pan cook these anchovies with some butter and oil on medium heat till it turns into cream.

Step 5: One thing to keep in mind is to cook them well because if they are not cooked completely then the dish will taste rancid.

Step 6: Blend all these ingredients together and make a smooth paste.

Step 7: Now your Bagna cauda is ready, you can arrange it in a clay pot and dip the fresh chopped vegetables in it.
