Ciambotta: Stewed Vegetables From The South of Italy

Ciambotta is a dish of Southern Italy, and comes from Lucania. It is made up of zucchini, onions, pepper, eggplant, potatoes, and cherry tomatoes. In a pan, these vegetables are used to cook with tomato sauce, olive oil and basil. It looks like Caponata but Ciambotta contains more variety of vegetables.

1 1/2 Cups of Eggplant
1/2 Cup of Cherry Tomatoes
1 Onion

METHOD

Step 1: After washing the vegetables, cut them nicely.

Step 2: Add three tablespoons of olive oil in a pan with onion and cook them for one minute.

Step 3: Cook eggplant for 2 minutes then incorporate the pepper and potatoes in it. Again, cook them for 2 minutes.

Step 4: Now add zucchini, cherry tomatoes and basil and cook them for one minute.

Step 5: Cook all the vegetables along with three tablespoons of water.

Step 6: Cover it with a lid and let them cook at low flame for 15 minutes.

Step 7: After that, uncover the pan and add salt to it.

Step 8: Check the consistency and it should be juicy not watery. You can adjust it by adding more water according to the requirement.

Step 9: If you are going to add some water, let them cook for more time.

Step 10: Your delicious Ciambotta is ready to enjoy and serve.

Step 11: It can freeze for 3 to 4 days.
