Escarole and Anchovies Soup

METHOD

Step 1: Cleaning Escarole

First of all we will wash the escarole well. Then cut it into large pieces.

Step 2: Preparation of Ingredients

Finely cut the garlic cloves and cherry tomatoes. Add olive if necessary.

Step 3: Cooking

Take a big pan. add olive oil to it and warm it on the middle flame. Now add chopped garlic and black pepper. Then fry them for a couple of minutes, until it becomes golden. Keep in mind that it should not be burnt.

Step 4: Add Anchovies

Add anchovies to the pan. Keep it stirring, until it dissolves in the oil.

Step 5: Escarole Cook

Coat the Escarole in the skillet with oil, garlic, anchovies and peppers well.

In this step, cook it for 10 to 15 minutes on the middle flame and cover the frypan. 

Stay stirring occasionally until this escrow is softened.

Step 6: Add Tomato and Olive

Add cherry tomatoes and olives with escort and cook it for five to seven minutes.
