Italian Chocolate Custard (Crema Pasticcera al Cioccolato)

Chocolate custard is also known as chocolate cream. It is used to make pastries, puffs, or other dessert filling. It consists of some basic ingredients like cornstarch, eggs, butter and sugar. Dark chocolate is used for its specific and main flavor.

INSTRUCTIONS

  • Put a bowl in the refrigerator to chill because we need it to pour hot custard.
  • Never use flour in this custard, only cornstarch or rice starch.
  • Whether the cream is hot or cold, mixing should be perfect. When it is hot, vigorously mixing will lower the temperature and maintain the creaminess when it’s cold.

METHOD

Step 1: Take a saucepan and mix sugar and eggs softly without whipping them.

Step 2: Now add cornstarch and mix constantly to avoid any lumping.

Step 3: When everything is blended nicely then mix cocoa powder and salt in it.

Step 4: Now add milk to this mixture and mix it vigorously to avoid any lumping.

Step 5: Place this saucepan on low heat and cook it with constant stirring.

Step 6: After some time, turn off the heat and now it’s time to add butter to it.

Step 7: Now add and vigorously stir the mixture in a chilled bowl to reduce the temperature.

Step 8: When it turns smooth and even, cover it with a foil or food wrap.

Step 9: Now place it in the refrigerator for 6 hours.

Step 10: After this time, take it out from the refrigerator and stir vigorously until smooth.

Step 11: It will take a long time to get a smooth, velvety and creamy texture with continuous stirring.

Step 12: Now the cream is ready. Enjoy it!
