Italian Potato Croquettes (Crocchette Di Patate)

Italian potato croquettes known as “Crocchè di Patate” are an Italian street food. They are crispy, golden on the outside and soft on the inside. They are made in the southern regions of Italy. METHOD

Boil the Potatoes:

Step 1: Peel the potatoes well, then cut them into pieces. 

Step 2: Drop them into a large pot of salted water and bring to a boil. 

Step 3: Boil them till they are soft (about 15-20 minutes).

Step 4: Take out and mash the potatoes well until they are smooth.

Prepare the Mixture for the Croquettes:

Step 5: Set the mashed potatoes aside to cool. Combine the grated Parmesan cheese, chopped parsley, 1 egg, a little salt and black pepper. 

Step 6: Mix well to combine all the ingredients, so that the mixture becomes smooth.

Make the Croquettes:

Step 7: Scoop out a small portion of the potato mixture and make an oval croquette. 

Step 8: Make an indentation in the center and place a cube of mozzarella cheese inside. Fold mixture around cheese. Now close the crochet by reshaping it.

Coat the Crochet:

Step 9: Dust each croquette lightly with flour. Now beat the egg in a bowl. 

Step 10: Dip each croquette in this beaten egg mixture. 

Step 11: Then coat them with bread crumbs. Verify that these are fully covered.

Fry Croquettes:

Step 12: Heat oil in a pan. The flame should be medium. 

Step 13: When the oil is hot, carefully fry the croquettes until golden brown and crispy on all sides, about 3-4 minutes per side. Remove excess oil using paper towels.

Serve:

Step 14: When you feel that the mozzarella cheese has melted inside, serve the Italian potato croquettes warm.
