METHOD
Step 1: To prepare tiramisu rolls, first prepare the sponge cake base. Step 2: Separate the egg whites and yolks, then beat the egg whites well. Step 3: Add sugar and a pinch of salt to the yolk and mix it well. Now we will add sifted flour, starch and baking powder to it. Add them slowly so that the mixture becomes smooth. Step 4: Cut the vanilla bean lengthwise, scoop out the seeds and add to the mixture. Step 5: Mix the beaten egg whites carefully with an up and down motion so that the mixer does not separate. Step 6: All you have to do is line an oven tray with greaseproof paper and add the dough to a few centimeters thick. Step 7: Bake in a preheated oven at 350 F for 6-7 minutes. Be careful not to overcook otherwise it will dry out, which can crack when rolling.Now Prepare the Syrup:
Step 8: Mix sugar and espresso coffee and cook on low heat. When syrup is prepared, turn off the heat and add instant coffee and almond extract. Step 9: When the sponge cake base is ready, take it out and wait for a few minutes and invert it onto the foil. Step 10: Gently remove the baking paper and cover that side with foil as well. Roll it and leave it for half an hour to give it a shape.To Make the Mascarpone Filling:
Step 11: Separate the yolk from the egg white. Add sugar to the yolk and beat it, after foaming, add mascarpone cheese. Finally, beat the egg white and add it to the mixture. Step 12: Open the roll slowly. Brush coffee syrup on it. Step 13: Spread the mascarpone filling, leaving a 1/2-inch gap around the edges. Re-roll the roll and peel off the foil.
