Neapolitan-Style Pork Rind Chops (Braciole di Cotica)

This recipe is a traditional Italian dish. Which is hard to find nowadays. Neapolitan Style Pork Chops is a great side dish. which is served as a second course. It is used for making rag out  Which is eaten with homemade pasta. In this recipe, pork rinds are rolled with cheese, pine nuts, parsley, raisins and garlic and then cooked in a tangy tomato sauce.

1 Cans (28 oz) Peel Tomatoes (800 g)
2 Tablespoons Raisins  (30 g)
1/4 Cup of Grated Pecorino Romano Cheese (50g)
3 No Long Garlic
1 No  Stick of Aegean
1 No Small Onion
½ No  CarrotPepper, For Taste
Extra Virgin Olive Oil For Taste

METHOD

Step 1: To prepare this dish, first we will clean the pork skin. With the help of a knife, Remove all the hairs from the root until clean.

Step 2: Then wash and dry them well and cut into small rectangles.

Step 3: Add grated cheese, pine nuts, soaked raisins, parsley and finely chopped garlic inside them. 

Step 4: Then roll them up and stick a toothpick in it. Or tie it with kitchen twine.

Step 5: Finely chop the onion, celery and carrot and add extra virgin olive oil to a pan. Now fry the celery, carrot and onion.

Step 6: Brown the pork skins in the pan on a low flame. Be careful not to burn them.

Step 7: Now add the peeled tomatoes to the pot and cook on low flame for at least 3 hours.

Step 8: Cook it slowly until the pork skins become juicy.

Step 9: The dish is ready when the pork skins are well cooked and the sauce thickens.

Step 10: You can serve it with pasta or anything else, hope you will like this dish.
