Pizzicotti: Mouthwatering Sicilian Almond Soft

There isn’t a Sicilian pastry shop in Sicily that doesn’t have it. It represents the special flavors there. Among which Badam pizzicotti is a popular name. which are soft and aromatic cookies. These are generally considered to be the main ingredient of Sicilian almond pastries. Making them at home is easy. Here is a recipe where I have reduced the sugar so that the almond flavor is more prominent.

CONTENT OF RECIPE

2 Egg Whites
1/4 Tsp Almond Extract
3/4 Cup Powdered Sugar
Powdered Sugar To Taste For Decoration
The Juice Of 1 Lemon

METHOD

Step 1: Put egg white in a bowl and beat it.

Step 2: Add almond extract and lemon peel to it and beat it further.

Step 3: When it becomes foamy, add powdered sugar.

Step 4: Mix with a spoon for a while and then add the almond flour.

Step 5: Knead first with a spoon and then with your hands, until soft.

Step 6: Once the soft dough is formed, refrigerate it for at least 30 minutes.

Step 7: Knead the almond paste a lot, it is not necessary.

Step 8: After 30 minutes, form the dough into small balls of uniform size, dip them in powdered sugar and place them on a baking sheet.

Step 9: Shape by pinching with two fingers.

Step 10: Then keep them in the refrigerator for at least 4 hours. 

Step 11: It is best to leave the dough in the fridge for longer.

Step 12: Next, bake your pizzicotti in a preheated oven at 350 F for about 12 minutes.

Step 13: At this stage, your Almond pizzicotti is ready.
