The Authentic Recipe For Sausage and Rapini: The Most Successful Neapolitan Marriage

This is one of the famous dishes of Campania: sausages and friarielli (rapini / broccoli rabe) which is very popular in Naples. This wonderful duo is the invention of an anonymous genius. Everyone must have wondered at least once who could be the genius who created it in the first place, but no one knows whose creation it was.

METHOD

Step 1: Cut the flowers from the friarielli and separate them. Now discard its stems and large leaves, they are not needed here.

Step 2: Put the flowers in a bowl with water and wash them well. Place them on a sieve to drain the water.

Step 3: Boil the friarielli in lightly salted boiling water for a few minutes. Then remove them.

Step 4: Take a pan and fry the crushed garlic and black pepper in it. 

Step 5: Incorporate the friarielli and fry them for about ten minutes.

Step 6: In another pan, fry the garlic. Then add sausages and cook with white wine. Cover and simmer until the sausages are done.

Step 7: When the sausages are cooked, add them to the pan with the friarielli and cook them for a few more minutes. Add the sausage cooking juices to it.

Step 8: Now the sausage and friarielli are ready to serve.

Step 9: You can store the sausages and friarielli in an airtight container in the refrigerator for up to 2 days. Reheat them in the pan for a couple of minutes before enjoying.
