METHOD
Step 1: First we will clean the fresh anchovies. Remove its head, tail, intestines and central bone and clean it well with water. Step 2: Take a frying pan. Add olive oil to it. Then add the bread crumbs. Add a garlic clove and chopped parsley and toast the breadcrumbs. Step 3: Turn off the heat and remove the pan from the stove as soon as the breadcrumbs brown. Step 4: Now take a pot and put water in it then add salt. When it starts boiling, add pasta. Step 5: Take another frying pan and add 2 or 3 tablespoons of olive oil. Then add a black pepper, garlic cloves and anchovy fillets. Fry it until the anchovies melt in the oil. Step 6: Add the anchovy fillets and cook on low flame for a few minutes. Step 7: Add a few tablespoons of the pasta cooking water into the pan containing the anchovies. Step 8: Strain the pasta and incorporate it into the pan with the anchovies. Keep stirring until the spaghetti is fully incorporated into the sauce. Step 9: Top the plate with a handful of toasted breadcrumbs.TIPS
- Chopped garlic, parsley and bread crumbs can be added to it for more taste. If you don’t like the taste of garlic, you can add more flavor by toasting breadcrumbs.
