Swordfish and Eggplant Parmigiana

METHOD

Step 1: Prepare the Eggplant

Cut the eggplants a few hours before eating and sprinkle salt on them. Then press them under something heavy and keep them for an hour so that their excess water comes out.

Step 2: Fry the Eggplant

After an hour, dry the eggplant and fry it with olive oil. Then, you need to wipe off the excess oil with kitchen paper.

Step 3: Prepare the Swordfish and Sauce

Heat a little oil in a pan. Now add garlic and fry the swordfish cubes. Then add the tomato sauce. Now add salt in it. After that, put the lid on and let it cook on low heat.

Step 4: Cut the Mozzarella

Thinly slice the mozzarella so it can be easily added to the Parmigiana.

Step 5: Making Parmigiana

Preheat the oven to 350 degrees Fahrenheit. Spread eggplant layer, sauce layer, mozzarella and parmesan on a baking sheet.

Step 6: Bake it

Bake the dish for about 30 minutes until a light crust forms on top.
